The signature sub-zero aged coffee is brewed using flannel cloth filters from beans matured just above their freezing threshold, producing a smooth, rounded cup with subdued acidity and clean aromatics. Its fragrance stays well-defined even iced, providing a refreshing pause during the working day.

Fresh Pasta and Hearty Savoury Options

At lunchtime, pasta dishes allow diners to select either flat fresh pasta noodles or dried spaghettini. Opting for fresh flat pasta with Japanese basil genovese lets the sauce cling to the springy ribbons, highlighting the substantial ingredients.
